So you wnet snoek fishing and 3 out of the 40 snoek is not so lekke in the meat quality department-what to do?

After flekking the snoek,cut out the fillet strips on either side. Get yourself normal beef biltong spice at places like Freddy hirsh or deli spices (normally in a 1kg bag)

Roll your fillets in this spice,lay in a deep dish/bowl and sprinkle some coarse salt (not too much) and some worcester sauce on the fillets.

Leave it in the fridge overnight and hang in a well ventelated place or biltong cupboard. I use a old metal filing cabinet with a bathroom extractor fan built in on the top for mine.

After a couple of days this is what you can expect.....

This will work like a bomb for all the vaalies like me.
How is it? Does it taste good?
Can i use fish like geelbek or kob?

Gerrit I dont think you can use cob/geelbek but that said I dont really know.

It tastes really lekke, 10 times better than the old school salt only snoekbiltong,funny thing, it looks just like a piece of beesbiltong at first site!!

The guys I fish with use Freshwater Barbel and make biltong the same way, it taste

like normal biltong.

Geelbek-biltong is DIE biltong, vra maar vir die Gansbaaiers.

We made tuna biltong and it is also great.

Made like biltong sticks an put them on chicken wire with fans, to dry.

Ek is so opgewonde ne, lat ek nie weet of ek op die sand moet loop nie, of daarmee bou nie of die hond daarop moet hardloop nie, so ek gaan nou maar n wyn drink en hard daaroor dink!

Glad you FINALLY made it! Now its a case of settling in, getting that mother-ship ready and painting her deck red!

We will def make a plan on the "social side" of things, remember I stay in wine country so maybe we can kick off with a wine-tour!!!! ha ha!

Enjoy the cardboard boxes for now!

Boat is in a shed keeping combine harvester company for the time being

Building house now, so big competition for scarce resources!

But will start slowly....first thing is planks for the tailer, then Buoyancy certificate then C.O.F. But must be on the water by December, even if only the Baan for starters!

I am sitting looking at the best wave in the country a 100m away, so nothing wrong with a winetour on the verandah!!!
