I have experience with fermenting sugar wash for mampoer, I have never used fruit before.
You need a reflux distil if you want the strong stuff.

The first 500ml or so of your run is ethanol, the guys on moonshiners always throw that away and then bottle the rest.

Correction, it's Acetone among some other nasties. It's the ethanol you want, so don't through that away, lol.
