Gents...

During my last visit on the South Coast - Happy-Wanderers..., We were lucky enough to have some fresh sards been netted and of course we were thick into the Shad aswell.

Well.., My good old''bie-bap'' friend and myself felt this was just too much work for a holiday morning ..,and after a few casts.., we left the feeding and netting frenzy on the beach ..,and decided to build a fire.., and open a few ''frisky and much expired Windhoekies...''

Attached is a pic.., of the most devine and fresh tastin sards i have EVER had...,Just salt & Pepper....!! Got to have them straight of the fire.., Finger lickin stuff.... ( And Yes..,even the shad were okay-ish after them sards... Good for the hart ...,but eina for the Gout...)

Yoh now thats what I call a fish braai! Plain and simple. We done the same thing in Paternoster once when the mullet was running and we netted quite a few. Put them on the braai whole just after gutting and scaling them with just salt and pepper as seasoning. When served, all we did was squeeze fresh lemon juice over them with a slab of butter! Fish never tasted better!

Harders is one of the most underrated eating fishes, like you say Mike, must be fresh, into the coarse salt & straight onto the braai.

Boys...!

I can tell you .., the only thing needed still was some fresh bread and butter...!!

Even one of the ''Sine-Netters..'' came past..,Landy loaded with crates of sards and i gave him one..., fresh like that of the grid..,This oke couldn't believe it man..., hot and drippin with Omega 3's all down his chin...!!! Huhhh.. Nearly sold the oke one of mine for a crate of his..., but couldn't get it over my hart...

The Aunti.., camping next door to us..., says she used to make canned ''roll-mopps'' with the fresh sards like that... Any one knows how this is done...???

Ja...boet,
my wife says we should rather eat the bait cause I seldom catch anything. Jislaik...haarders and sardines are lekker on the braai...ask a Portuguese. But bait quality can be a bit dicey....those netted sardines that SPARRI got....are...magnifique !

Roll mops can be made in the following manner:
Fillet the sards and salt them heavily. Place in a shallow dish so that the brine can collect in the dish. Leave for 24 hours in a cool dry place.
Strain off and place in a large glass container.
Fill the container with white or brown spirit vinegar.
You can add chillies and seasoning like the mixed spices you use for pickle fish. Awesome babelas kos!
