Cut the crayfish in half and remove the intestine. then braai over slow coals while basting generously with garlic butter, shell down. Thats the only way I've had it off the braai.

Cut in half, remove intestines.
Make a basting sauce with butter, touch of garlic, juice of half a lemon and a pinch of salt over low heat - do not boil - it will make the lemon go real bitter.
Your coals must be very hot and your grid height adjustable.
Baste the crays generously on the flesh side and place flesh side down on grid (be ready with some water to put out any flames).
You can now also baste the shell with the remaining basting sauce.
Braai quickly until slightly carmelized, turn over - shell side down, raise the grid and braai until done - not more than 10 minutes.

I braai these regularly (in season of course) and for me the best is to split them down the middle (use your fishing scissors to cut through the shell), butterfly them and put them shell down on a hot fire for about 5 mins and then flesh side down for about 2 mins. Baste them a couple of times with a mixture of melted butter, crushed garlic and lemon juice.

Spoke to MCM the other day whilst out on the water... They have not been updated with any changes as yet.  In their opinion it is too late to bring about a change for the new season but i am sure there is some "place your own colour adjective here" person in parliment that will make a change a week before the season opens leaving us in total confusion.  This will lead to unwarranted fines and arrests as the cops / MCM will not know the correct law and just cause mass chaos.

But as it stands now it looks as if we are in for the same rules as last year.  4 per permit holder, everyday from November till 1 Jan, there after only weekends and public holidays as well as only being allowed to fish from crays between 8:00 and 16:00
