Have a look at my first reply again. Intermediate weight forward / rocket taper for most applications. Only if you are boat fishing will you want a sinking line for reef fish such as GT. In this case a DI-7 will do - something to get it down quick. As for a leader, 2m of 30lb test weak link (in case you get hung up - lose the leader not the whole line) and a bite trace of 30cm of 80lb flouro. Normal salt flies such as deceivers, clousers, sempers will all do for most of the fish. For sailies I use a custom double hook billfish fly with a sliding popper head. For tuna in Cape Town I use a chum fly.

Without sounding like a pratt, what deep sea experience do you have? Do you have a boat (from profile no. Remember the deep sea is a big desert with a ferw oasis around where the fish are. If you are going to be trying this game off a joint charter boat, you are not going to make any friends. To get a bill fish you probably will have to travel to kenya, The moz islands or further away, and if you are spending that amount of cash on a trip to catch a bill, then no offence, but your 2k set up is asking for heart ache. Most guys doing that will have 3 or 4 rigs worth 10-15k with them as a sail or marlin will break tackle like matches (especially if you dont know what you are doing).
If its dorado and bonnies you are mainly after, then your 10-12 weight will be fine and off durban in season, if you havea ride, you can ghet them at the fads etc, but unless the rest of the boat buys into the idea, aagain you wont make friends. Big game fly fishing is a sport on its own and does not mix well with conventional tackle.
For flies, seatrch the net, plenty about theis but Fin-ss is right, Big clousers, decievers, sempers etc are a good start point. Deceivers are nice as you can troll them as well if you want. Not legally fly fishing, but the fight is the same
