this is a must try

take any fish but stumpies, couta, natal snoek and rockcod are the best i find

steal one of the wifes baking trays line it with foil shiney side on top place it on ur braai grid on a very hot fire.

put a 1/5 block of butter not marg in and let melt and spread around covering the foil.

place a 1/4 block of butter in a bowl and add 4 table spoons of apricot jam and melt in microwave mixing well.

place fillets of fish skin down in baking tray and pour over the butter and jam mix over the fish.

NB: keep basting the fish with a basting brush ur spoon with the sauce at the bottom of the tray every 2-5 minutes the more often the better.

Never turn the fish leave it on the skin side of the fillet when the meat goes white on top its ready.

trust me you will eat ur finger tips off with this one

enjoy

bru, down in the cape we've been munching on snoek like that forever. it has to be one of the best ways to cook a fish, it even works well on yellowtail!

RTFLMAO @LL, the peanut butter goes into the mouth and onto the dogs pallet, that's the only other use other than spreading it on a slice of fresh warm bread with some golden syrup........

@Tony C and Mantis:  You guys should try the mentioned mixture with a variant of adding just a little garlic to that melted mix, then perhaps another is to put da feesh in da smoka wid sum brandy oak barrels shavings, and then ask sum1 to psot the results 4 U as you really woulda eaten your fingers off......

Guys,

I swear there are people who do Peanut Butter and apricot jam on their snoek.(GROSS)

I don't even like the jam on my fish.

@Tony

It's only the last week or so that the wife started complaining cause I started dropping a lure into the bog, same experience as at the dam just not as cold.:ifishin

@LL

Boet the appricot jam on snoek, braaied or smoked is an absolute must, believe you me, it just does it...... but PB, well like I said other than the occasional PB and syrup sarmie the only other use for it is to crack yourself laughing after feeding it to the dog or the cat, trying their best to get it off their pallets.:clap12

That's cool, I suppose the saying different strokes for different folks comes into play here, anyhow it's (with or without jam) still better than peanut butter, :puke:puke:puke:puke

one that i came up with that works nice (not sure if others do but discovered it while on camp and is the only way i cook fish on a braai now

take your fish descale and gut it, leave head and tail on.

every two cm slice the fish from the top to bottom as deap as you would cut a fillet, repeat on other side

rub course sea salt over the belly gap, and the slices

mix some olive oil, and mixed herbs and with fingers smeer all the slits and belly.

on top of this add slices of lemon to the gut cavity and into the slits

wrap whole fish in tinfoil

put on braai leave to cook slowly turning it every now and then

serve on a plate of rice the meat will slide off the bone and the best stay moist, even the head and tail stay moist eish feeling hungery now
