Rigs

Good Day all.
I am new to the whole barbel fishing concept, I'm looking to catch me a nice cat, but I am faced with a dilemma!

I have absolutely no knowledge as to barbel rigs, could you please help out a fellow 'Sealine-er' out
I am looking for a simple, yet effective rig to use for Chicken livers.

I like to use dubble hooks.

1)Which would you suggest when using Chicken livers?
2)And which would be a better option for Fish heads?

I use a single hook for chicken livers and a double hook for fish heads, hook top hook in mouth and bottom hook in the bait :
