Bleed them like Tuna immediately after catching and great to eat.

I kept 6 to eat this season and released 14. 

I like to eat fish and fish responsibly and like a great fish fillet better than a rump or piece of venisson

Lift gill plate with knife tip & work up towards the "spine", press knife through the gills & artery out on the other sides gill plates & cut through towards the bottom.

This is a boertjie trying to explain in English, so hoping I make sense.
