correct pitch for 17ft baronet with 60hp johnson

I have recently just bought another boat a little 17ft Baronet, the boat seems structurally fine and has buoyancy that is valid for a few years.
 
However the current early 1980s 75A Yamaha is poked, has zero compression on the bottom cylinder. I bought it like this knowing the motor was probably toast as I could not turn the flywheel by hand. I will strip this powerhead and see, maybe its just a blown gasket, but this is not likely.


  however, I have 3 running 60HP Johnsons in the garage collecting dust.
 
I remember in the 90's I had an uncle with a similar sized cabin boat that used to fish the harbor with a 40hp and I'm sure he could plane with 3 adults onboard.
 
Firstly I’m not going to mount twin engines on a little inshore fishing boat so want to run a single 60HP
 
I have a 15 pitch prop currently what options should I think of other than putting it in the water now.
 
I will not be towing tubes etc. this is simply a fishing boat for me and the kids to potter around the harbor dams etc
