Bottom Fishing Rigs

Hi all
My name is Dale, I've recently started fishing Deep Sea ladies in Christmas Rock, East London after about a 15 year break from Light Tackle Boat Offshore Angling. I'm looking for any advice with regards to making traces for bottom feeding fish including Roman's, Dogs, Coppers etc. Eg. Breaking strain and length between hooks, sinkers etc. Images if possible would be great. I do have some idea of rigs but am always willing to learn and try new things. My setup is a Penn Mariner Kayak 6.6, 8" Kp with 50lb braid.

Targeting coppers, first make a release weight with a 20oz sinker or two so you can get them back down without killing them..and have a yo yo handy with it on..Otherwise long hook line, short sinker line, thinner sinker than hook line, romans 3/0 to bit bigger hooks and 0.6mm line? and bigger fish 8/0 to 10/0 kendal and 0.8 to 1mm leader. Release all breeding stock please..

I only have bottom fishing experience with a kp off my kayak, all I can say is circle hooks for the win, it allows you to use smaller hooks e.g. 5/0 thick gauge which will hold most fish whilst also catching the smaller reef species.
