Weight of Jig heads used when offshore dropshotting

Hi Guys,

What is the general rule of thumb when it comes to the weights of the jig heads used while dropshotting offshore?

IE: 1oz in 20m of water,
2oz in 40m of water.

Also, you get so many hook sizes on various jighead weights. What is the general size you would use on 5inch and 7inch plastics?
