stocking up some farm dams ?

i have a mate that has a farm, the farm is situated just outside Bethlehem (Paul Roux)

since buying the farm he has built some dams and wants to stock them with some fish
the question being which fish would suite the climate ?

trout
this would be first prize but have heard they don't breed at certain water temperatures ?

bass
do they survive any climate ? would you add other specie to the same dam as a food supplement ?

as far as i know its way to cold for them


any advise tips suggestions would be appreciated
