Lets start off by saying that FURUNO makes THE best fish finders AND radars and that GARMIN makes the best chart plotters.
Option 1, as you have posted is pretty much the perfect set-up. It combines the Garmins Chart plotter, with its ease of use, to the Furuno's fish finding capabilities. You will need to add a temperature probe to the set-up as well. Its easier if you simply buy it with your Furuno FVC585, as it will be a simple probe, with a additional y-cable. You can get the garmin temperature probe, but you will then have to buy the fishfinder module for your plotter. If your motors do NOT have fuel flow gauges, you can also look at buying garmin fuel flow meters. You will also need to fish finder module for this. The garmin hd radar has received many very good reviews and i have a 36nm one on my boat and am very happy with it. The garmin autopilot is also getting RAVE reviews, with many claiming that the shadowdive feature being awesome. The garmin vhf is pretty new on the market, so i don't know much about them. Since its from GARMIN, i'm pretty confident that it'll work well. One of the nicest features on the Garmin plotters is the regular software updates garmin makes.
My current boat has a Garmin 4212, which is identical to the 4012 Chart Plotter, with a 36nm Garmin HD radar. My echo is a FCV 620 with a 600w through-hull transducer. My vhf radio is a entry level ICOM 304 unit with a PACIFIC aerial. GET A PACIFIC AERIAL!!! It works very well and i have not yet found the need to upgrade. I run a navman 3100 fuel flow meter for fuel management, not that i use it any more, but usefull for the boats first few trips when you can see where the boat is running at its most economical range. All my radio's are connected to external speakers, which makes hearing so much easier, especially if you are not near to the radio, say in the bow of the boat and somebody is giving co-ordinates over the radio. I also run a Garmin GPS60CSX handheld plotter in a bracket, with a powercable, as a back-up unit. Should anything ever happen to my main unit, the small handheld will still allow me to fish offshore for the rest of the day.
Option 2 - Furuno Navnet 3D MFD12. Its furuno's attempt to capture the plotter market. The new 3D chart plotters seem to work VERY well. They have had some issue's, which is to be expected with a very new product, but in FURUNO style, have resolved most of them. There is still some issue with charts, but nothing that will affect your use here in the Cape. The Furuno is NOT as easy to use as the Garmin, but in all honesty, is pretty much JUST as good as the Garmin. You can also use the FURUNO vhf radio, radar and fishfinder. Furuno does not make a autopilot, so your garmin autopilot seems to be the best choice. If you have the space, Furuno also makes a 15" screen unit!!!
Option3 - same as option 1, just instead of a 4012, you could look at a 5012. Same unit, just the 50XX series is touch screen. This gives you a slightly larger screen, as you do not need the area for the buttons.
On what boat are you putting all these new toys? What motors? Some of the motors CAN be hooked up to your head unit, others not. Almost all the units run NMEA 0183 these days and only a handfull nmea2000. Get a PROFFESIONAL to install your system, especially your autopilot!!
