You could hook it anyway you like but to be honest it would be best to have them wriggling about on the bottom. Maggots in the UK are always hooked from the back end side (flatter end) and if you look nicely there are little raised bits of skin. This is where you should aim to get the tip of the hook through only. Try not tie pierce the flesh so that it oozes all the goodness. Small thin hooks are the order. Also, if you fish with small hooks invest in a hook disgorger as it works way easier than a set of long-nose pliers! ;)
