|Kentucky Fried Shad Recipe:
in one bowl: beat two eggs,
in another bowl put self raising flour & add spices ( anything u fancy, i used pepper,aromat, cajun pepper, garlic & herb, chilli flakes, salt). Dust the fish (shad) fillets in flour mix & then put them into egg, & then dust in flour mix again.
Heat oil ( sunflower / vegetable) in large frying pan ( make sure the oil is super hot & make sure there is enough oil in the pan to cover fillets).
Once oil is hot, throw the fillets in the pan, 4-5 minutes on one side then turn & another 4-5 minutes, basically until they nice and brown & floating in the oil....
Then take fillets out the pan and put them on paper towel to remove excess oil.
Serve with lemons, mayo & fresh herb. ENJOY !!
on a side note if you want to make a lighter batter then you can add soda water to the flour mixture and make it a syrup consistency, if you do this then you don't need to dip the fish fillets in the beaten eggs, just put the fillets into the flour mixture and then straight into the pan.
