|I am in the fortunate position whereby my family does not enjoy snoek on the braai.
This is what you do if you have left overs.
Snoek pate - Great with biscuits and a dop for the supa 15
250gm braai snoek deboned
250gm smooth plain cottage cheese
250 ml fresh cream
pepper to taste
juice and rind of large lemon
mix all ingredients well in a liquidiser
add snoek last and pulse 4 times.
lasts for a week in the fridge

|try take that last bit of snoek and smoke it by putting some rosemary sticks in the coals. or just smoke a whole fillet like this if you intend to make a smoked snoek paté. i also like to add about 2 table spoons of melted butter to the mix and refrigerate so as to set it. chilies and or chives can be added for that extra lil kick. nice recipe mate. quick and easy.
