FRESH MACKEREL

Hi All, can anyone put me onto some nice FRESH MACKEREL, am wanting to smoke them [ NOW DO NOT BE FUNNY, I WANT TO SMOKE THEM IN A SMOKE BOX, COLD SMOKE]  Please PM me if anyone can advise^^..

Butterfly fillet. Salt and hang for a few hours in the wind and then put in a cold smoker for 3-5 hours with a lid on.

I used to have a cold smoker that I built out of a 44 gallon drum.

Cut the lid off the drum and a "Rabbit Hole" on the side at the bottom.

Make a rooikrans braai fire in the bottom of the drum and burn down to coals. Smother the coals with oak wood chips (You used to be able to buy a sack full of these at a place in Paarl that made wine barrels for a few Rand).

Hang the salted fish on racks in the middle of the drum and cover the open lid to keep the smoke in. This drum can smoke away for up to 5 hours without recharging coals.
