I have prepared Dorado and got people who do not eat fish at all hooked. This says a lot for the fish. However there are different tastes to all and i have not seen a Sada Sada appear here. It has a very soft flesh and oily that keeps it moist when preparing.

What sizes / weight the ones you are catching ?

Depending on the size I have different recipes. Usually I don't mess it up, the fish flesh is so tasty that you don't need to do much.

Smaller ones there is no other way around, just add salt and grill.
Bigger sizes it starts to get intresting, many recipes but again you can just boil it had some potatoes and vegetables and you are ready to go just serve with olive oil.

The head of a bigger rockcod is a gourmet meal!!!

Please tell me the usual sizes and I'll send you some recipes that you are going to love.

hmmm... in the Western Cape not much beats a traditional snoek braai, with rooster brood (askoek) and homemade apricot jam.

then fresh tuna is also worth a mention, sashimi cuts with soy souce are incredibly good or fresh tuna fillets marinated in sesame oil, soy sauce, ginger, garlic, green onion, and lime juice, then pan seared coated with sesame seeds ... hmmm lovely

other favourites include: Galjoen - rich flavour ! Grunter (cooked in foil with fresh herbs and fish spice), Cob on the coals & yellow tail !!!

actually too many to mention....

Really an impossible task to judge...all fish cooked correctly with complimentary ingredients is tasty...depends on the chef and formula and of course freshness.
