Yeah (S)Pierre has nailed some giants! The big one's always seem to be on their own.

What's the best way to cook hotties? I'm thinking of putting together some kind of Thai Fish Curry with hottentot and coconut milk as a base..

Hotties are hugely underrated. The trick is to bleed them and gut them as soon as possible.

The Goan coconut fish curry works like this. Cube the hottie and rub with salt and lemon juice. Fry some onions and when they get colour add garlic, chillie and ginger.

Stir a bit and add cumin. coriander. and fennel (ground).

Then add the coconut milk reduce the heat and don't let the coconut milk boil. Add the fish cubes and turn off the heat but leave on the stove plate. The residual heat will cook the fish. When the fish is flaky take out and serve with basmati and sambals.

Cucumber and yoghurt is good. grated apple with grated ginger. chopped onion tomatoe and chillie with lots of coriander leaf and a sprinkle of vinegar and a pinch of sugar.
