For me it is not bad when fried, but I think it would taste better smoked.

Had it inseveral different ways - presentations... but I would say grilled (olive oil + garlic), or a combo in the oven grilled with a tomato/onion/pepper/mix...saucy.

What I have found....is that people often "over fry" Dorado, which is a bit to dry, but you can doctor it with mayo / chilli sauces. The heads goes down well too, lots of meat.

Can be dried too...

For that reason it's called "The chicken of the sea" -

Fastest growing fish in their league.

Thanks for your response. I found the fried dorado I had to be a little too dry. Also experienced the same with fried yellowtail and since then I have never tried it again.

You can have it fried, braaied, smoked and grilled and if done correctly it will be one off the best tasting fishes you have had in your life. I do not think it has the texture to be a good sushi fish but for the other 4 ways I have eaten it and it is brilliant. There is very few other fish in the sea that can compare with the taste of Dorado if and when prepared correct.

If ever you are in Ndhloti on the beachfront, there is a seafood cafe right next to the Total garage called Spud. Ask for a portion of grilled Dorada and chips. You will not regret it. The staff grills the fish just right. Not overdone and dry but still with all the juiciness of a fat fillet.

Very reasonably priced too. _seal1_
