Hi guys a while but a friend of ours gave us some barracuda. What is going to be the best way to cook it? Many thanks.

Hope it has not been in the freezer too long. Cut in steaks, across, not filleted like a normal fish(otherwise it becomes dry). Fry in a skottel or in tinfoil on the braai.

Salt, black pepper, garlic and butter(touch of lemon juice). Just before done on the grid for a quick once over on each side.

Do not over cook.

Barracuda is an awesome eating fish, just make sure you know where it was sourced, if it came from a tropical reef habitat it's best avoided.

Barracuda is one of the primary carriers of ciguatera poisoning in tropical reef environments. In a nutshell, ciguatera is a micro organism that lives on certain corals and sea weeds found in tropical environments. When the coral and weed gets eaten by reef fish, the toxin they produce enters the food chain and, through bio magnification, eventually when humans eat barracuda, grouper etc. it causes a terrible disease which can last for a very long time.

Not all predatory fish carry the toxin, even when caught in environments where ciguatera is present, but it's definitely not worth the risk. As a general rule, it's safer to stay away from reef predators caught in tropical habitats.

I coated it in bread crumbs and fried it. It was some of the best fish I've had so far. Looking forward to trying others.
